Paul Van Dorp
Owner & Cheese Maker
.
Paul Van Dorp, the founder of Blyth Farm Cheese, immigrated with his wife and children to Canada from the Netherlands. Paul knew he wanted to make cheese even before moving. He decided to produce Gouda, the most popular Dutch cheese. He felt that making this cheese was a tribute to his heritage. Mixing traditional roots with innovation, Paul took Gouda a step further and made it with goat's milk- instead of cow's milk - filling a gap in the industry. Eventually he started using sheep's milk, raised and milked right on his farm.
Award-winning cheese makers don’t just appear. The Van Dorps have been successful farmers and cheese makers for generations. Paul became a certified milk grader and receiver, and in 2011 was handed the permits from OMAFRA to operate the cheese plant.
